Smokey Cajun steak sandwich
SERVES 4
Mist a large griddle pan with caloriecontrolled cooking spray and preheat over a medium-high heat. Sprinkle 4 x 125g lean beef minute steaks, fat trimmed, with 2tsp Cajun seasoning. Add 1 large red onion, sliced into rings, to the pan and cook until browned. Add the steaks for 1 min each side, or until cooked to your liking. Meanwhile, toast 8 slices thick-sliced caloriecontrolled bread and spread 1tbsp reduced-fat salad dressing over half of the slices. Top with a handful of rocket, the cooked steaks, onion, 2tbsp beetroot dip and the remaining bread slices and serve.
