This summery salad is loaded with delicious things, and the chicken and beans will keep you feeling satisfied long after the last mouthful.
Serves 4 PREP: 35 mins
4 boneless chicken breasts, thawed if frozen, skinned and cut into small chunks 1 red onion, cut into wedges 1tsp fresh rosemary, chopped 1 garlic clove, crushed Low-calorie cooking spray 250g cherry tomatoes, halved Small bag of salad leaves ½ cucumber, halved lengthways, deseeded and sliced 400g can white beans, such as cannellini, drained and rinsed 1tbsp balsamic vinegar, to serve Preheat the oven to 200°C/180°C fan/gas 6. Put the chicken in a bowl with the onion wedges, rosemary, garlic and some seasoning, and spray generously with low-calorie cooking spray. Toss well, spread out in a small roasting tin and roast for 20-25 mins, or until the chicken is cooked and the onion is tender.
2 Meanwhile, put the cherry tomatoes into another roasting tin, spray with low-calorie cooking spray and season lightly. Roast on the shelf under the chicken for the last 10 mins of the cooking time.
3 Remove both tins from the oven and leave to rest for 5 mins. Divide the salad leaves between plates or shallow bowls and scatter over the cucumber and beans.
4 Arrange the roasted chicken, onion wedges and tomatoes on top and drizzle with the balsamic vinegar to serve.
