Turkey and spring onion burgers

‘I love a burger, and my turkey and spring onion recipe is extra lean and packed with flavour. The secret is to use a mixture of breast and thigh mince to keep the pat ties moist. I’ ve served mine with potato wedges, lettuce, tomatoes and relishes .’

250g turkey breast mince 250g turkey thigh mince 2tbsp fresh coriander, chopped 2 cloves garlic, finely chopped 3 spring onions, finely sliced Salt and ground black pepper 1tbsp smoked paprika 4 crusty burger buns Shredded lettuce, tomatoes and ketchup, to serve

1 Preheat the oven to 180ºC/gas 6. Next, add all the ingredient­s (except the buns!) to a bowl and mix together thoroughly. If using your hands, wash them thoroughly first, and wash anything else that comes into contact with the raw poultry.

2 Divide the mixture into four patties, and fry in a non-stick frying pan for 5-6 mins or until charred, then pop into the oven for another 5 mins until cooked through, with no signs of pink showing.

3 Serve in a crusty bun with the lettuce, tomatoes and ketchup, and enjoy!

TIP Try adding chopped ginger and lemongrass for a zesty twist. If making potato wedges, simply cut four medium potatoes into wedges, dust with paprika and drizzle with a little olive oil. Oven-bake (180ºC/gas 6) for 30 mins until cooked through.
