Spicy lamb with courgettes
My spicy lamb with courgettes is a real soul-foods upper, perfect for curling up on the sofa. I’ ve added the‘ spice’ at the end, so the whole family can add as little or as much as they want. Goes great with some fresh bread tom op up all the juices

300g diced lamb leg Pinch chilli flakes Pinch ground cumin Salt and black pepper 2tbsp olive oil 2 courgettes, cut into half moons 1 clove garlic, sliced Generous pinch dried oregano 500g passata 12 baby plum tomatoes, cut in quarters 7g of basil leaves, ripped Dash of Tabasco to taste Spinach (optional)
1 Season the cubed lamb with the chilli flakes, cumin, salt and pepper. 2 Heat the olive oil in a pan and, once it is hot, introduce the lamb and sliced courgettes. Sear both ingredients for about five mins until they start to colour, then add the garlic.
3 After another minute, add the rest of the ingredients, except the basil and Tabasco. Cook the sauce for approximately 5 mins, add a touch of water if it dries up too much.
4 When it’s done, add some of the basil and taste to ensure the flavours balance, adding more water if it’s too thick.
5 Finally, drizzle over a few drops of Tabasco, and scatter with more basil.
TIP: Try adding a few handfuls of spinach in at the end!
