Serves 1 Ready in 20 mins 2 garlic cloves, finely chopped 1 small medium-hot red chilli, deseeded and finely chopped 2cm piece fresh root ginger, peeled and finely chopped 1tsp dark soy sauce ½tsp Thai fish sauce (nam pla) 200g large raw peeled prawns, thawed if frozen 2 large spring onions, roughly chopped 2tbsp chopped fresh coriander 1 medium egg white Low-calorie cooking spray 1tbsp lime juice ½ level tsp sweetener granules Long-stem broccoli florets, to serve Sliced radishes, to serve

1 Put the garlic, chilli, ginger, soy sauce and fish sauce in a bowl and mix well. Pour half the mixture into your food processor and add the prawns, spring onions, coriander and egg white. Blitz it all to make a coarse paste, using the pulse button.

2 Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Drop tablespoon­s of the mixture into the hot pan (you should have enough for about six) and flatten slightly into 1cm thick patties. Cook for 2½ mins on each side, or until golden brown and cooked through. Lift on to a plate and leave to cool.

3 To make the dipping sauce: put the lime juice, sweetener, remaining fish sauce mixture and 1tsp cold water in a small, sealable pot, mix well and seal tightly.

4 Blanch the broccoli in a saucepan of boiling water over a high heat for 1-2 mins. Drain and refresh under cold running water. Pack the bites and dipping sauce into a lunchbox or bento box with the broccoli and radishes. Cover, chill and eat by the next day.
