Heat the vegetable oil in a hot frying pan till almost smoking then add the following, giving a quick toss before putting in the next ingredient­s; ginger, garlic, spring onions, bean sprouts and the mangetout.

Stir-fry for a minute then add 1tbsp water to create steam (which helps cook the vegetables much faster), keep tossing the ingredient­s for 30 secs until the water is evaporated then add the noodles and remaining soy sauce, stir and remove the pan from the heat.

Divide the noodles between four bowls, flake the salmon on top and garnish with coriander, chilli and a little squeeze of lime if desired.

TIP Try adding a dash of sesame oil at the end!
