1Place 250g sushi rice in a bowl, and wash with cold water. Repeat 3 or 4 times, and drain in a sieve. Put washed rice in a heavy saucepan with 330ml water, bring to boil and simmer for 10 min with lid on. Turn off heat and leave to stand for 15-20 min with lid on. 2 Meanwhile, make sushi rice seasoning by mixing 2tbsp Japanese rice wine vinegar, 1tbsp mirin, 2tbsp caster sugar and 1tbsp salt. 3 Transfer rice into a bowl and gradually fold in sushi rice seasoning. Cool, then chill, covered with clingfilm, until you’re ready to use it. 4 Cut a 340g can of Spam into eight even slices, then dry fry in a non-stick pan until slightly crispy. Leave to cool. 5 Shape cooked rice into oblongs, scatter with finely chopped chives, then place a Spam slice on top of each. 6 Cut a sheet of nori seaweed into thin slices, then wrap one piece around the centre of each rice stack. Garnish with strips of spring onion and serve with soy sauce for dipping. Serves: 4 Cost per head: 95p
