Then add 2 seeded, sliced red peppers and cook for another 5 min. 2 Stir 300ml hot beef stock into the pan and reduce the heat. Cover and let the casserole simmer gently for 20 min until the sausages are fully cooked through and the pepper and onions soft. 3 In a small bowl, mix together 1tbsp cornflour with 2tbsp water. Add this mixture to the still-simmering pan and stir well until the sauce has thickened. Serve the sausage casserole with a helping of mashed potato and peas or steamed cabbage.
