BUTTER TOFFEE APPLES

STEP 1 Place eight apples on a baking sheet lined with baking paper. Pierce eight lollipop sticks through the stalk end, so they’re secure. Place in the fridge to chill. STEP 2 In a saucepan, heat 125ml rice syrup, 2tbsp coconut oil, 70g coconut palm sugar and 2tbsp oat, rice or almond milk, until combined. Turn up the heat then whisk for 10 mins. STEP 3 Remove from heat, whisk in a pinch of sea salt and 1tsp vanilla extract and coat the apples. Keep twirling the apples as the coating hardens, then place on a baking sheet. Chill to harden.

How much do you spend a week? for the past few years i’ve been living life in a dressing room, but if i’m at home i spend around £100 a week. i live near a huge supermarke­t and i’ve been shopping there for years because i know where everything is. Describe your daily diet… i’m not a massive breakfast person, but normally i’ll have a flat white from my local coffee shop, and i always take my omega 3 and vitamin b pill with a yoghurt drink. i’ve given up meat, so lunch is typically vegetarian sausages, grilled tomatoes and mushrooms. i’m not a great cook but, for dinner, i might have a tofu stir-fry or i’ll go out and have turkish food with grilled veg, houmous and pitta. My daughter loves making pasta with her pasta machine, so we might have that too. is there anything you refuse to eat? i don’t eat too much indian food. i love it, but it just doesn’t like me! What’s the strangest thing you’ve ever eaten? bear Grylls wanted me to eat a rat, but i couldn’t do it. someone offered me a sheep’s eye, but the thought of it made me ill. What would you cook to impress someone? i like salmon en croute. it’s so easy to make and most people tend to like it!
