Veggie delights!

Going meat-free needn’t mean missing out on all your favourite foods. Try these tasty and healthy vegetarian-friendly recipes from Slimming World that all the family will enjoy Carrot & chickpea burgers

Serves 4, ready in 1hr 15 mins

Low-calorie cooking spray 800g carrots, peeled and grated 3-4 spring onions, chopped 1 celery stick, chopped 1 small onion, chopped 410g can chickpeas, drained 2 garlic cloves, peeled Handful of chopped fresh chives 1 egg 1tbsp grated lemon zest 60g wholemeal bread, crumbed 1tbsp sweet smoked paprika 1kg potatoes, cut into chips Salad, to serve For the dressing 150g fat-free natural yoghurt Handful of chopped fresh mint 1tbsp sweet chilli sauce Juice and zest of 1 lemon STEP 1 Spritz a frying pan with low-calorie cooking spray and place over a medium heat. Add half the grated carrot, spring onions and celery and cook for 8-10 mins. Put the remaining carrots in a food processor with the onion, chickpeas, garlic, chives and egg, then blend to a thick paste. STEP 2 Sieve the cooked veg to drain off excess liquid, then put in a bowl with the paste. Add the lemon zest, breadcrumb­s and paprika. Season and combine using your hands. Divide into eight portions and, with wet hands, shape into burgers. Cover and chill for at least 3-4 hours. STEP 3 To make the dressing, whisk all the ingredient­s together. Season and chill until ready to serve. Preheat the oven to 200°C/gas mark 6. Cook the chips in salted boiling water for 5 mins. Drain, return to the pan and cover. Cool slightly, then shake the pan to roughen edges. Place on a lined baking tray, spritz with low-calorie cooking spray and bake for 20 mins. STEP 4 Put a pan over a medium heat. Spritz the burgers with low-calorie spray and fry for 3 mins on each side. Serve with chips, dressing and salad.
