Seared teriyaki salmon with stir-fried broccoli noodles
Salmon and sesame seeds are good sources of amino acid tryptophan, known for boosting sleep quality and mood
SERVES 4
● 4 salmon fillets
● 250g egg noodles (dry weight)
● 2tbsp toasted sesame oil
● 300g broccoli, cut into small florets
● 300g mushrooms, quartered or sliced
● 1 bunch spring onions, sliced
● 1tbsp sesame seeds
FOR THE TERIYAKI SAUCE
● 4tbsp soy sauce
● 4tsp mirin (rice wine)
● 1tbsp clear honey
● 1tbsp diced fresh root ginger
● 2 garlic cloves, crushed
STEP 1 Make the teriyaki sauce by mixing all the ingredients together then, brush a little over the salmon fillets.
STEP 2 Cook the egg noodles according to the instructions on the packet. Drain well.
STEP 3 While the noodles are cooking, heat 1tbsp of the toasted sesame oil in a frying pan over a medium heat. Add the salmon fillets to the hot pan and cook for about 3 mins on each side, until golden brown and cooked right through.
STEP 4 Meanwhile, heat the remaining toasted sesame oil in a wok or deep frying pan set over a high heat. Add the spring onions, broccoli and mushrooms, and stir-fry for 4–5 mins, until they are just tender, but still retain some bite.
STEP 5 Stir in the remaining teriyaki sauce and the cooked noodles. Heat through for 2 mins, then divide the mixture between four plates. STEP 6 Top with the salmon fillets, sprinkle with sesame seeds, and serve immediately.
