CHINESE PRAWN STIR-FRY
A TASTY MEAL THAT’S GREAT FOR A NO-FUSS DINNER
serves 1
● Low-calorie cooking spray
●150g raw king prawns
● 1 carrot, sliced
● 50g bean sprouts
● 50g pak choi, shredded
● 1 spring onion, sliced
● 10g cashew nuts
● 1/2tsp sesame seeds, toasted (optional)
● Lime wedges, to serve
For the marinade:
● 1tbsp dark soy sauce
● 1tsp honey
● 1tsp rice vinegar
● 1tsp lime juice
● 1/2 red chilli, deseeded and chopped
STEP 1 Combine all the marinade ingredients in a non-metallic bowl. Add the prawns, cover, and leave to marinate for a minimum of 1 hr in the fridge.
STEP 2 Place a wok or frying pan lightly coated with the cooking spray over a high heat. Add the prawns and stir-fry for 2-3 mins.
STEP 3 Add the carrots, bean sprouts and cabbage, and stir-fry until the prawns are cooked through.
STEP 4 Remove the pan from the heat and serve topped with the spring onion, cashew nuts, sesame seeds, and lime wedges for squeezing over.
