BREAKFAST

BLUEBERRY & PEAR BIRCHER MUESLI (V) Put 40g plain porridge oats (from your allowance) into a mixing bowl and stir in some peeled and diced fresh pear, 1/ tsp vanilla extract, 1/ tsp ground

2 2 cinnamon, juice of 1/ lemon and 75ml

2 water. Cover and leave to soak in the fridge overnight. The next day, stir in some fatfree natural Greek yoghurt and put the mixture in a bowl, topping with pear slices, blueberrie­s and pomegranat­e seeds.

STRAWBERRY CHEESECAKE POT (V) Put 100g fat-free natural cottage cheese in a food processor, add 1 tsp fat-free natural Greek yoghurt and 1/ tsp ground 4 cinnamon. Blend until smooth. Halve some strawberri­es and mix in a bowl with a pinch of sweetener and most of the grated zest from 1/ orange. Spoon most of the

2 strawberri­es into a pot and top with the cottage cheese mix and the rest of the strawberri­es. Sprinkle with the remaining orange zest, cover, chill and serve.

AVOCADO BREAKFAST BOWL Preheat the oven to 220°C/fan 200°C/gas 7.

Grill some lean bacon rashers (all visible fat removed), roughly chop and set aside. Spray a frying pan with low-cal cooking spray. Add some chopped mushrooms and fry until cooked, adding some baby leaf spinach to wilt for the last few mins. Wipe the pan and stir-fry some cherry tomatoes. Mix with the bacon, mushrooms, spinach, tomatoes and some diced lean ham (all visible fat removed) and season. Spoon the mixture into an ovenproof dish, cover with foil and bake for 10 mins. Remove the foil, crack an egg into the centre and return to the oven uncovered until the egg is cooked. Serve with 1/ an avocado,

2 sliced, and freshly chopped chives.

PANCAKES WITH MIXED BERRIES (V)

Mash a banana in a bowl with a fork until smooth, then stir in 1 beaten egg and 1 level tbsp flour. Spray a small, non-stick frying pan with low-cal cooking spray and place over a medium heat. Pour a third of the pancake mixture into a cookie cutter and cook until the base is golden brown. Flip over the pancake and cook until cooked through and repeat with 2 more pancakes. Serve with berries and fat-free natural fromage frais, then dust over ground cinnamon.
