Like greengroce­rs and bakeries, butchers have been a mainstay on the British high street for hundreds of years. Between the 1990s and mid-2000s, their future looked uncertain, with the number of shops declining by 60 per cent*, but things have begun to look up as people place more importance on the provenance of meat. In fact, 97 per cent of customers surveyed said they would rather buy meat from a local, trusted source*. the ninth annual national butchers’ week, from 13-19 March, aims to celebrate the choice, service and convenienc­e they offer.
