he UK’S number one organic dairy brand*, Yeo Valley likes to give its customers the best of both worlds with products that balance healthy eating with great taste. The expert team on its family-run farm in Somerset has spent 15 years perfecting Yeo Ice Cream – and the scrumptious results have been well worth the wait! Its signature creaminess comes from fresh organic British double cream from Yeo Valley’s own herd and top dairy farms in the area. Luxurious organic ingredients have been used to create four temptingly authentic flavours: decadent Double Chocolate, smooth Salted Caramel, sensational Strawberries & Cream and velvety Vanilla. This classic is the perfect accompaniment to the refreshing Pimm’s Jelly with Strawberries (see recipe below). Whether eaten straight from the pot or with a dazzling dessert, Yeo Valley Ice Cream’s delicious dairy goodness is a true treat.
PIMM’S JELLY WITH STRAWBERRIES
SERVES 4 500ml Pimm’s mix (Pimm’s diluted with a soft drink such as lemonade or ginger beer) 5 leaves of gelatine 1 punnet of strawberries 1 apple 1 pear 1 orange 1 pot Yeo vanilla ice cream fresh borage flowers/mint leaves
1 Make your Pimm’s mix to the desired strength. Gently warm half of the mixture.
2 Soak the gelatine in cold water. When it is soft and floppy, add to the warm Pimm’s and stir.
3 Pour the Pimm’s and gelatine mix back into the remaining Pimm’s by passing it through a fine sieve. Set aside to chill.
4 Slice some of the strawberries very finely and line the sides of your serving glasses with them. Put any offcuts in the bottom of the same glass, pour in the Pimm’s jelly mix to just over halfway and place in the fridge.
5 Peel and cut up the apple, slice the pear and segment the orange, removing the pith. Gently mix it all together.
6 Once the jelly is set in the glasses, arrange the fruit on top ready for serving.
7 Ball a scoop of Yeo vanilla ice cream and place on top of the fruit.
8 Garnish with borage flowers or fresh mint leaves if you prefer (optional). Find Yeo Ice Cream in selected nationwide stores, £4 for 500g. Visit yeovalley.co.uk for more recipes and to discover Yeo Valley’s deliciously delectable dairy range
