PIMM’S JELLY WITH STRAWBERRI­ES

SERVES 4 500ml Pimm’s mix (Pimm’s diluted with a soft drink such as lemonade or ginger beer) 5 leaves of gelatine 1 punnet of strawberri­es 1 apple 1 pear 1 orange 1 pot Yeo vanilla ice cream fresh borage flowers/mint leaves

1 Make your Pimm’s mix to the desired strength. Gently warm half of the mixture.

2 Soak the gelatine in cold water. When it is soft and floppy, add to the warm Pimm’s and stir.

3 Pour the Pimm’s and gelatine mix back into the remaining Pimm’s by passing it through a fine sieve. Set aside to chill.

4 Slice some of the strawberri­es very finely and line the sides of your serving glasses with them. Put any offcuts in the bottom of the same glass, pour in the Pimm’s jelly mix to just over halfway and place in the fridge.

5 Peel and cut up the apple, slice the pear and segment the orange, removing the pith. Gently mix it all together.

6 Once the jelly is set in the glasses, arrange the fruit on top ready for serving.

7 Ball a scoop of Yeo vanilla ice cream and place on top of the fruit.
