Woodchips are readily available to buy (try Lakeland or Waitrose), but you can use sawdust or wood shavings if you’re lucky enough to know a carpenter. Ensure you only use hardwood, as conifers have too much resin and will taste of creosote. Enjoy experiment­ing with oak, apple, cherry, alder and beech, which all create different flavours. Alternativ­ely, you can try smoking over hay or even tealeaves, which work particular­ly well with salmon.
