CHOOSE YOUR WOOD
Woodchips are readily available to buy (try Lakeland or Waitrose), but you can use sawdust or wood shavings if you’re lucky enough to know a carpenter. Ensure you only use hardwood, as conifers have too much resin and will taste of creosote. Enjoy experimenting with oak, apple, cherry, alder and beech, which all create different flavours. Alternatively, you can try smoking over hay or even tealeaves, which work particularly well with salmon.
