BILBERRY AND LAMB’S LETTUCE SALAD WITH BILBERRY DRESSING
Preparation 10 minutes Serves 4 as a side salad Bilberries are combined with balsamic vinegar to make a sweet yet tangy dressing for a summer salad.
50g lamb’s lettuce ¼ cucumber, sliced 10 cherry tomatoes, halved 100g bilberries (or blueberries)
FOR THE DRESSING
50g bilberries (or blueberries) 2 tbsp olive oil ½ tbsp balsamic vinegar ½ tsp honey (optional)
To make the dressing, blitz the bilberries in a blender or food processor. Add the oil and balsamic vinegar and whizz to combine. Season with salt and freshly ground black pepper, adding a dash of honey if the bilberries are tart. Put the salad ingredients in a bowl. Add the dressing and toss well. Transfer to a clean dish and serve at once.
