It takes time to prepare a crab, but the rewards are utterly delicious and well worth the effort

Dressing a crab sounds like a tailor’s nightmare and it can be a very fiddly way to get your dinner. You have to identify and remove the inedible parts, break open the rock-hard claws and work like a miniature miner to get at every morsel of priceless flesh. More often than not we buy crab already dressed – with the white and brown meat already extracted and neatly presented in the crab’s shell. But a DIY crab extraction is worth the effort as the fresh meat is extra sweet and delicious. You need kebab sticks, cocktail sticks and a hammer to winkle out all of the meat.
