EGGS-TRA SPECIAL PANCAKES

IF you’re searching for an eggs-otic twist to your pancakes on Shrove Tuesday, look no further as Liam Charles of Great British Bake Off fame, right, has joined forces with Cadbury Creme Egg to create a series of irresistib­ly goo-ey recipes.

Liam says: “I love pancakes, and always eat more than one. But, sometimes they need an egg-tra special twist – my favourite goo-ey treat, a Cadbury Creme Egg! Also, they add a perfect twist to Valentine’s Day bakes – delicious and dateworthy! I had great fun trying the different recipes out – and eating the results.”

INGREDIENT­S: FOR THE PANCAKE BATTER:

100g plain flour; ¼ tsp fine sea salt; 1 tbsp. of caster sugar; 2 large eggs; 300ml full fat milk; 3 Cadbury Creme eggs; 1/4 tsp vanilla extract; couple knobs of butter; couple squiggles of vegetable oil

Filling: 100g dark chocolate; 3 Cadbury Creme eggs

Creme egg Sauce: 100g dark chocolate; 2 Cadbury creme eggs; 50g butter; 250ml double cream; 2 tbsp. caster sugar; 1 tsp vanilla extract

To finish: Icing sugar

METHOD:

1. For the pancake: sift the plain flour, salt and caster sugar into a bowl and mix with a whisk make a little well in the centre.

2. Now add your eggs and mix until well combined.

3. Then add the milk in a small stream, whisking all the time, followed by vanilla extract and the inside of three Cadbury creme eggs. Your pancake mix is ready! 4. For the filling: melt the creme eggs and dark chocolate in microwave or in a heatproof bowl over a pan of gently simmering water. Once melted, put aside. 5. Creme egg sauce: melt the chocolate in a heatproof bowl, over simmering water. Then stir in the butter, double cream and caster sugar.

6. Add the Creme eggs and continue to stir until it’s smooth.

7. Remove the pan from the heat and leave to cool. 8. Make the pancakes: prepare a small bowl of melted butter and vegetable oil.

9. Bring your pan to medium heat, then give it a good brush with the butte/oily mixture

10. Use a ladle to pour enough mixture to cover the base of the pan. Give it a good roll to ensure super clean edge.

11. Once the pancake mix has set it should cook in around a minute. Brush the edges of pancake with egg wash and then add a generous splatter of the melted Creme egg filling on one half, then fold the other half over, press together, and allow to cook for couple more minutes.

12. Repeat until all your mixture is used up then place them all on a ] plate, finish with generous squiggles of your Creme egg chocolate sauce and sprinkle with icing sugar.
