Fast and easy chorizo pizza

Pizza is always a family favourite and the toppings can be varied according to taste. Serves 4

INGREDIENT­S

300g strong white bread fl our

1 teaspoon instant fast action yeast

1 teaspoon salt

1 tablespoon olive oil

4 tablespoon­s tomato pasta sauce

125g mozzarella

75g chorizo, sliced

100g cherry tomatoes

Small handful basil leaves

METHOD

1) Preheat the oven to 220C/ 200C fan/ gas mark 7.

2) Place the fl our in a large mixing bowl and stir in the yeast and salt.

3) Add the oil and 200ml hand hot water and mix well to a soft dough. Turn out onto a lightly fl oured work surface and knead well until the dough is smooth.

4) Cut the dough in half and roll each into a circle about 25cm round, then place on an oiled baking tray and leave to rise in a warm place for 15- 20 minutes until lightly risen

5) Spread the pizzas with the tomato sauce. Slice the mozzarella and arrange on top of the pizza with the slices of chorizo. Cut the cherry tomatoes in half and scatter over the pizza with the basil leaves.

6) Bake the pizza for 8- 10 minutes until golden, risen and crisp.
