Garlic roast scallops
Scallops are a treat for any meal whether served as part of a dinner party menu or for a light lunch. This deliciously easy and flavoursome recipe is a taste of luxury whether using fresh or frozen scallops. If getting fresh, ask for the shells to add a wow factor to the presentation. Serves 4.
INGREDIENTS
16 sea scallops, rinsed and drained 75g butter, melted 5 cloves garlic, finely chopped 2 shallots, chopped 3 pinches ground nutmeg Salt and pepper to taste 110g breadcrumbs 4 tablespoons olive oil 4 tablespoons chopped parsley Lemon wedges for garnish
METHOD
1) Preheat oven to 220C/200C fan assisted/gas mark 7 .
2) Place scallops, butter, garlic and shallots in a bowl.
3) Season with the nutmeg, salt and pepper. Stir gently to combine. Transfer to a baking dish.
4) In a separate bowl, combine the breadcrumbs with the olive oil then sprinkle on top of scallops.
5) Bake in a preheated oven until the breadcrumbs are brown and scallops are done, about 11 to 14 minutes.
6) Top with parsley and serve with lemon wedges. Ideal with salad and crusty white bread and butter.
