Cookery: MasterChef: The Professionals, 8pm, BBC2

The heat is never off in the MasterChef kitchen and that is certainly true when it comes to the pros. Six chefs face a skills test tonight which is set by Monica Galetti. They have 20 minutes to prepare a meal using cod’s cheeks and an accompanying sauce or garnish. Following that, they must cook their own signature dish for judges Monica, Gregg Wallace (left) and Marcus Wareing before those who have impressed the most are handed quarter-final spots.
