Slow cooker chicken and apricot tagine
This Moroccan-inspired dish is full of flavour which gets mopped up with the couscous, making it ideal for soaking up the sauce. Serves 6.
INGREDIENTS
785g skinless, boneless chicken breast fillets, cut into chunks
2 large onions, thinly sliced
65g dried apricots, chopped
50g raisins
300ml low-salt chicken stock
2 tablespoons each of tomato puree, lemon juice, plain flour
11/2 teaspoons each of ground ginger, ground
cumin and cinnamon
1/2 teaspoon black pepper
1/4 teaspoon curry powder
1/8 teaspoon cayenne pepper
Couscous or rice to serve
METHOD
1) Place the chicken, onions, apricots and raisins in a slow cooker.
2) In a bowl, whisk together the chicken stock, tomato puree, lemon juice, flour, ginger, cumin, cinnamon, black pepper, curry powder and cayenne pepper.
3) Pour the mixture over the chicken in the cooker. Cover, set the cooker to High and cook for 21/2 hours, or set the cooker to Low and cook for 5 hours.
4) Cook the couscous or rice according to the packet instructions.
5) Fluff up the couscous or rice with a fork. Scoop onto plates and serve with the chicken tagine.
