Chicken and chorizo bake
This can be prepared in advance for a quick family meal or for entertaining. It is also a great way to use up vegetables that might be sitting around in the fridge. Serves 4.
INGREDIENTS
4 skinless chicken breast fillets
2 cloves garlic, sliced
1 tablespoon paprika
1 medium courgette, chopped
1 small yellow pepper, chopped
6 to 8 chestnut mushrooms,
sliced
7cm chunk of chorizo sausage,
sliced
400g tin chopped tomatoes
50g Manchego cheese, grated
METHOD
1) Preheat oven to 180C/160C fan, gas mark 4.
2) Put the chicken breasts into a large casserole dish and sprinkle with the garlic and paprika.
3) Add all the chopped vegetables and chorizo and pour over the tomatoes. Sprinkle with cheese.
4) Bake in the oven for 30 minutes or until chicken is cooked through.
5) Serve hot with salad and crusty bread, or potatoes.
