Brazilian flan

This has a wonderful, creamy texture and the sugar melts down the side to make a caramel sauce. Serve with cream or some toasted coconut for a really special effect. Serves 8.

INGREDIENT­S

200g caster sugar

4 eggs, separated

1 (405g) tin condensed sweetened milk

200ml milk

METHOD

1) Preheat oven to 180C/160C fan assisted, gas mark 4.

2) Melt the sugar in a heavy saucepan over a low heat, stirring constantly. Once the sugar turns to syrup, pour into a round baking dish, swirling so that the syrup coats all sides of the dish. Set aside to cool.

3) Blend the egg yolks for 5 minutes, then add the condensed milk, regular milk and egg whites.

4) Continue to blend until all the ingredient­s are combined. Pour the egg mixture into the baking dish and cover with aluminium foil.

5) Place the baking dish inside a roasting tin and place the roasting tin in the oven. Fill the roasting tin with boiling water to reach halfway up the sides of the baking dish.

6) Bake until a knife inserted 2.5cm from the edge comes out clean, approximat­ely 45-50 minutes.

7) Allow to cool before turning out onto a plate and refrigerat­e before serving.
