Brazilian flan
This has a wonderful, creamy texture and the sugar melts down the side to make a caramel sauce. Serve with cream or some toasted coconut for a really special effect. Serves 8.
INGREDIENTS
200g caster sugar
4 eggs, separated
1 (405g) tin condensed sweetened milk
200ml milk
METHOD
1) Preheat oven to 180C/160C fan assisted, gas mark 4.
2) Melt the sugar in a heavy saucepan over a low heat, stirring constantly. Once the sugar turns to syrup, pour into a round baking dish, swirling so that the syrup coats all sides of the dish. Set aside to cool.
3) Blend the egg yolks for 5 minutes, then add the condensed milk, regular milk and egg whites.
4) Continue to blend until all the ingredients are combined. Pour the egg mixture into the baking dish and cover with aluminium foil.
5) Place the baking dish inside a roasting tin and place the roasting tin in the oven. Fill the roasting tin with boiling water to reach halfway up the sides of the baking dish.
6) Bake until a knife inserted 2.5cm from the edge comes out clean, approximately 45-50 minutes.
7) Allow to cool before turning out onto a plate and refrigerate before serving.
