Thai pork with peanut sauce
Pork chops are given a new twist with this flavoursome Thai recipe which has a kick and plenty of colour. It makes a tasty meal when accompanied by rice. Serves 4.
INGREDIENTS
4 tablespoons plain flour
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
4 boneless pork chops
2 tablespoons vegetable oil
75ml chicken stock
125ml coconut milk
2 tablespoons peanut butter
1 tablespoon honey
1 teaspoon ground ginger
1/4 teaspoon salt
4 tablespoons chopped spring onion
4 tablespoons sliced red pepper
4 tablespoons chopped dry roasted peanuts
4 tablespoons chopped fresh coriander
METHOD
1) Combine the flour, cumin, cayenne pepper and half a teaspoon of salt on a plate before coating the chops with the mixture.
2) Heat the oil in a large frying pan over a medium-high heat and cook the chops for about 4 minutes per side, until cooked.
3) While the pork chops are cooking, stir together the chicken stock, coconut milk, peanut butter, honey, ginger and the quarter teaspoon of salt.
4) Remove the pork chops to a serving dish and keep warm.
5) Pour the peanut sauce into the pan and cook, stirring constantly until thickened.
6) Pour the peanut sauce over the chops and garnish with the chopped spring onion, red pepper, peanuts and coriander.
