Asian beef stir fry
Asian style beef with vegetables and noodles with aromatic style flavourings is a tasty, easy and also healthy meal for any occasion. Serves 2.
INGREDIENTS
200g lean beef steak, sliced wafer thin
2 teaspoon cornflour
1 teaspoon Chinese five-spice powder
100g rice noodles
2 tablespoons each of soy sauce and dry sherry, or rice wine and water
2 tablespoons vegetable oil
1 large garlic clove, finely chopped
2cm piece fresh root ginger, peeled
1 fresh red chilli, seeded
1 carrot, peeled
1 small leek, trimmed
6 spring onions, diagonally sliced
1/2 red pepper, seeded and cut into strips
Soy sauce to serve
METHOD
1) Place the beef in a small bowl with the cornflour and five-spice powder, mix then use to coat meat.
2) Cook the noodles according to instructions.
3) Combine the soy sauce, sherry and 2 tablespoons water in a small jug or bowl.
4) Place a large frying pan over a high heat then add 1 tablespoon of the oil, using it to stir-fry the meat until cooked through.
5) Remove and add the remaining oil with the garlic, ginger and chilli. Stir-fry for 30 seconds, then add the carrot, leek, spring onions and pepper and toss these around for another 30 seconds.
6) Stir in the soy sauce mixture and as soon as the liquid is bubbling, mix in the drained noodles and finally the meat.
7) Serve immediately, with extra soy sauce to sprinkle.
