Leek and potato frittata

This is a simple recipe for a versatile dish which makes a great brunch with a tossed salad. It’s equally good as a tapas-style treat and can also be chilled and eaten cold. Serves 4.

INGREDIENTS METHOD

Heat 2 tablespoons of olive oil in a frying pan and sauté the leeks for about two minutes, until soft.

Remove the leeks and set aside.

Sauté the potatoes in the olive oil until cooked, about 10-15 minutes.

Pour in the eggs, cooked leeks, chopped parsley and season with salt and pepper.

Cook for 5-10 minutes and finish off under a moderate grill.

Cut into thick wedges and serve immediately with salad or eat cold, if preferred.
