Bacon gnocchi with peppers

Gnocchi is the ideal comfort food, warming and ready to absorb fresh flavours of vegetables, cheese and bacon. Serves 2.

INGREDIENT­S

Olive oil for frying 1 each of red, yellow and green peppers, chopped 3 slices smoked bacon, chopped 1 packet gnocchi (500g) Salt to season 5 tablespoon­s green basil pesto 3 tablespoon­s sweet chilli flavoured soft cheese 75g grated Cheddar cheese

METHOD

Heat a drizzle of olive oil in a frying pan and add the chopped peppers.

Once the peppers have softened, add the bacon.

Meanwhile, put the gnocchi in a saucepan of boiling salted water and cook for 3 minutes until they float on the top of the water, then drain.

Turn the heat down low under the frying pan and add the pesto, soft and Cheddar cheese. Stir until everything has melted together.

Combine everything in the frying pan with the gnocchi and serve.
