Preheat the oven to 220C/gas mark 8. Cut out four large heart shapes using greaseproof paper. Arrange the potatoes on one half of the greaseproof paper. Put the hake fillet on top with the asparagus.
Combine butter with lime zest and juice. Put a slice of butter on top of fish.Add a couple of lemon wedges and sprinkle the mint over the top. Fold the paper to seal the parcel thoroughly.
Cook for 10 minutes in a baking dish and serve the parcel directly to the table.
