Preheat the oven to 220C/gas mark 8. Cut out four large heart shapes using greaseproo­f paper. Arrange the potatoes on one half of the greaseproo­f paper. Put the hake fillet on top with the asparagus.

Combine butter with lime zest and juice. Put a slice of butter on top of fish.Add a couple of lemon wedges and sprinkle the mint over the top. Fold the paper to seal the parcel thoroughly.

Cook for 10 minutes in a baking dish and serve the parcel directly to the table.
