Half pancake, half omelette, these light-as-a-feather crêpes make a super-easy midweek supper. I use low-fat cream cheese, but you can experiment with different varieties. Each batch (2 crêpes) serves 1 2 eggs

120g (4¼oz) low-fat cream cheese

3 spring onions, finely chopped
