RISE AND SHINE PANCAKES
I can’t get enough of these paleo – or caveman – pancakes, which are made from the sort of simple ingredients our ancestors used to eat hundreds of thousands of years ago. They’re the ultimate easy breakfast treat, and you can whip up a batch in minutes.
Each batch (2 pancakes) serves 1 1 large egg
½tsp ground cinnamon 1 red apple
Beat the egg in a medium bowl, then stir in the cinnamon. Peel the apple and very finely grate the flesh into the egg mixture, and blend well.
Set the mixture aside for at least 30 minutes to thicken (but cover it tightly with clingfilm to stop the apple turning brown).
When you’re ready to cook, heat a knob of butter in a medium frying pan. Drop the batter into the pan, in blobs of 2 heaped tablespoons a few centimetres apart, and cook over a medium heat until the pancakes are lightly browned underneath. It shouldn’t take more than 2-3 minutes. Turn the pancakes over using a fish slice or palette knife (or flip if you’re feeling brave) and cook for another 2-3 minutes on the other side. Turn out onto a plate to serve.
The pancakes are easiest to make per serving, so you don’t have to fiddle around trying to get exactly half an egg or half an apple in the pan. Just multiply the ingredients to match the number of people who are eating – and double up if they’re feeling hungry. Serve the pancakes with natural yoghurt and icing sugar, chopped nuts, or more grated apple.
