PAN-FRIED PADRON PEPPERS WITH CHORIZO

Serves 4-6 as snack or starter

● 2 chorizo cooking sausages

● 12 padron peppers

● Sea salt

Cutthechor­izosausage­sintosmall pieces. Heat a large pan over a medium heat. Sauté the sausage for a few minutes, until cooked through and golden. Remove to a plate.

In the same pan, add the padron peppers and sauté in the chorizo oil for 4-5 minutes, until softened and beginning to blacken in parts. Throw the cooked chorizo back into the pan and cook all together for another minute. Serve with a sprinkling of sea salt on top.
