Breakfast fruit salad

SERVES 2

l Orange and pink fruits, enough for two people. Try apricot, nectarine, peach, melon, mango, papaya, guava or orange and pink grapefruit segments, cut into bite-sized pieces

l Zest of 1 lime, grated or thinly sliced

FOR THE DRESSING

Juice of 1 orange

Thumb-sized piece of fresh root ginger, peeled and finely grated 1 tsp runny honey (optional) 2 star anise PLACE all the dressing ingredient­s in a jar, seal with the lid and shake well to combine. Arrange the fruit in a serving bowl, drizzle with the dressing and scatter the lime zest over. Serve immediatel­y.
