AS THE competition reaches its climax, two teams of pastry chefs do battle in the toughest task Cherish Finden and Benoit Blin have set so far. It’s a single, eighthour challenge, involving a jaw-dropping sculptural centrepiece to feed 100 guests, and eight batches of immaculate desserts.
