Make cupcakes like a pro

Bonny Porter, founder of London restaurant Balls & Company, shows us how to make delicious vanilla cupcakes. PREHEAT the oven to 180c/gas 4 and line a tin with cupcake cases. Mix 125g butter, 1 tsp vanilla bean paste and 275g caster sugar. Add three eggs and beat together.

Fold in 150g plain flour, 75g selfraisin­g flour, ¼ tsp bicarbonat­e of soda and 125ml milk. Pour into cases until they are around two-thirds full and bake for eight minutes.
