PRAWN SALAD INAJAR

200g spinach 1 red pepper, sliced 1 carrot, peeled and grated Handful of pine nuts 5 cherry tomatoes, halved 100g prawns, cooked and shelled Salt and freshly ground black pepper

FOR THE DRESSING

2 tbsp extra virgin olive oil 1 tbsp white wine vinegar ½ tbsp Dijon mustard LAYER the salad ingredient­s in the jar in the order given above, adding a bit of salt and pepper to each layer.

Mix the dressing ingredient­s together and store separately. Pour the dressing over the salad and it’s ready to eat.
