For the bolognese
4 tablespoons olive oil 4 rashers (bacon or halal turkey), chopped 2 cloves of garlic, finely chopped 2 onions, diced 1 teaspoon salt 2 carrots (approx. 200g), peeled and diced 2 celery sticks (approx 150g), diced 1 teaspoon paprika 1 tablespoon ground cumin 500g beef mince 2 x 400g tins of chopped tomatoes 200g grated Cheddar
For the spaghetti crust
25g unsalted butter 25g plain flour 600ml whole milk, hot Salt and pepper 20g grated Cheddar 375g dried spaghetti
