STRAWBERRY AND CREAM CAKE
I CAN’T find a strawberry and cream cake recipe in Mary’s books, so make her Victoria sandwich recipe and add clotted cream to her buttercream.
Annoyingly, I ice it while it’s still warm — with disastrous consequences. I can picture Mary sadly shaking her head.
Its ready-made rival is a billowing cloud of buttercream topped with curls of white chocolate and strawberries.
JULIET’S VERDICT: The shop-bought sponge is light, but the strawberry jam is too sweet. The homemade version is much richer and more buttery. Lovely. WINNER: Homemade, though the shop one is far prettier to look at.
