CLASSIC flavours in a bun. SERVES 4.

Ingredient­s

2 skinless chicken breasts, halved lengthways 2 tsp olive oil Juice of 1 lemon 4 bread rolls, halved 3tbsp creme fraiche 1 Little Gem lettuce, chopped 2 boiled eggs, sliced Punnet of salad cress 25g parmesan, shaved

Method

1 Heat a griddle pan until very hot. Put halved chicken breasts between two pieces of baking parchment and flatten with a rolling pin. Remove and brush with the olive oil.

2 Cook chicken on griddle pan (turning once) for ten minutes or until cooked. Transfer to a plate, pour over a little lemon juice and season.

3 Put the rolls on the griddle pan, cut-side down, to lightly toast. In a small bowl, stir together the rest of the lemon juice and creme fraiche. Build burgers with the chicken, egg slices, lettuce, a dollop of the creme fraiche dressing, cress and parmesan.
