WATERMELON

WATERMELON FETA SALAD

Serves 2

1. In a bowl, mix ¼ finely sliced small red onion with the juice of 1 lime. Leave for 10 minutes. 2. For the dressing, whisk 2 tbsp extra virgin olive oil and 2 tsp honey into the red onion and lime mixture, then season. 3. Divide 50g rocket, 50g crumbled feta, 2 tbsp shelled pistachios, 1 tbsp chopped mint and six 2.5 cm-thick watermelon slices between two plates. 4. Drizzle with the red onion and lime dressing.

WATERMELON AND RASPBERRY SORBET

Serves 2

1. In a food processor, whizz together 600g chopped, deseeded frozen watermelon, 50g icing sugar, juice of 1 lemon and 100g fresh raspberrie­s. Do this in batches, if necessary. 2. Pour into a container and freeze for two hours. 3. Mash with a fork, or re-blend in a food processor, then re-freeze until set. 4. Serve scoops with fresh watermelon wedges and extra raspberrie­s.
