Sweetcorn, spinach & quinoa fritters

(Serves 2)

● 100g spinach

● 75g cooked quinoa

● 150g sweetcorn

● 1 egg white

● 2 tbsp plain flour

● ½ tsp baking powder

● Salt & pepper

● Pinch of chilli flakes

● 1 tbsp olive oil STEAM and drain the spinach, roughly chop it and set aside. Mix quinoa, sweetcorn, egg, flour, baking powder, salt, pepper and chilli in a bowl. Add chopped spinach and mix again. Heat olive oil in a frying pan and spoon the mixture into the pan (this mix will make 4 good-sized fritters). Fry each side for 2-3 minutes until golden brown. Serve with a big green salad.
