TODAY’S RECIPE: Baked chilli & jacket potatoes
EASY weekday supper. SERVES 4
Ingredients
4 large jacket potatoes 1 tbsp sunflower oil 2 red onions, chopped 3 garlic cloves, crushed 1 sachet (30-39g), chilli con carne mix 500g beef mince 100g smoked 2 tbsp tomato puree bacon lardons 400g can chopped tomatoes 400g can black beans, drained Sour cream, grated cheese and coriander leaves, to serve
Method
1. Heat oven to 200c/180c fan/gas 6. Prick potatoes with a fork, then bake for an hour. Meanwhile, heat oil in a frying pan and fry onion over a high heat for five minutes. Add chilli mix, stir to coat onions, then tip onion mixture into an ovenproof dish.
2 Put pan back over high heat and add mince, breaking it up as you go. Cook until starting to become crisp, then add to the onions. Return the pan to heat and cook lardons until crisp at the edges. Add them to the beef and stir.
3 Stir in puree and tomatoes. Put dish in oven and bake for 30 minutes until bubbling. Add beans and season. Cut each potato open and spoon in baked chilli. Top with sour cream, cheese and coriander if you like.
