Super green plant protein salad

(Serves 2) 1 tsp of bouillon stock powder 100g quinoa 50g edamame beans, cooked 50g peas, cooked 2 handfuls salad leaves 50g steamed green veg, such as broccoli, asparagus, courgette

sprinkling sunflower or pumpkin seeds

For the dressing

½ avocado juice of ½ a lemon ½ tsp Dijon mustard 4 tbsp olive oil

BRING a pan of water to the boil, add the stock and quinoa and cook for 15-20 minutes until soft. Drain and rinse well under cold water. To make the dressing, place all of the ingredient­s in a food processor, loosening up the mixture with a splash of water as it will be quite thick, owing to the avocado. To assemble, mix the avocado dressing through the quinoa, peas and edamame. Top with the salad leaves and steamed veg and a sprinkling of seeds.
