Prawns with pasta

PRAWNS work brilliantl­y in this easy Mediterran­eanstyle pasta dish. And here’s that nori seaweed again. SERVES 2 (880 calories) 250g wholewheat pasta 4 tbsp olive oil 2 celery stalks, diced ½ fennel bulb, sliced 4 spring onions, sliced 2 garlic cloves, diced 50g anchovies from jar, drained and chopped ½ tsp dried thyme 350g prawns, fresh or frozen 185g frozen spinach, defrosted 2 nori seaweed sheets, finely chopped Juice of 1 lemon ¼ tsp Tabasco sauce to taste COOK the pasta according to the pack instructio­ns. Meanwhile, in a large deep frying pan, heat the olive oil and saute the celery, fennel, spring onions and garlic for 4-5 minutes, until they’re soft but have not browned. Add the anchovies and thyme and cook for a further couple of minutes. Add the prawns, spinach and nori seaweed, along with the lemon juice, Tabasco sauce, and a sprinkling of salt and black pepper, to taste. Add the drained pasta to the pan, tossing it well to coat with the sauce. Serve with a multicolou­red salad (add 20 calories).
