Think of Spain and what are the first things that come to mind? As with every other popularised European country, it’s the almost cartoon-like imagery of flamenco dancers, bull-fighting, tapas, elegant white horses and sherry that fill our initial thoughts. It might sound dated and uncultured but in fact it’s anything but. Despite inescapable and ever-pressing modernisation, these iconic impressions of Spain are especially true when it comes to the sun-dappled and sizzling region of Andalucía; Spain’s southernmost territory and arguably it’s most quintessential example of Spanish culture. With its striking Gothic cathedral, baroque churches, enchanting medieval lanes and endless historic references scattered throughout, you might assume that Seville would be somewhat stuck in the past, but nothing could be further from the truth.
