Prawns with Pasta & Seaweed
WE LOVE prawns and they work brilliantly in this easy Mediterranean-style pasta dish. And here’s that seaweed again.
SERVES 2 (880 calories)
250g wholewheat (or gluten-free) pasta 4 tbsp olive oil 2 celery stalks, diced ½ fennel bulb, sliced 4 spring onions, trimmed and sliced 2 garlic cloves, diced 50g anchovies from a jar, drained and chopped ½ tsp dried thyme 350g prawns (fresh or frozen, defrosted) 185g frozen spinach, defrosted 2 nori seaweed sheets, finely chopped Juice of 1 lemon ¼ tsp Tabasco sauce to taste COOK pasta according to pack instructions. In a deep frying pan, heat the olive oil. Saute celery, fennel, spring onions and garlic for 4-5 minutes, until they’re soft but not brown. Add anchovies and thyme and cook for 2 minutes. Add the prawns, spinach, nori, lemon juice, Tabasco, and salt and pepper. Put the drained pasta in the pan and toss to coat with sauce. Serve with a multicoloured salad (add 20 cals).
