Hot chocolate like a pro

ANGUS THIRLWELL, co-founder of Hotel Chocolat, reveals how to make the perfect winter warmer... FOR one serving, grate 5 tsp of goodqualit­y chocolate, from a bar that is 70 to 100 per cent cocoa: the higher the percentage, the richer the taste. Pour an 8oz mug of milk or coconut or almond milk into a pan over medium heat. Add in the chocolate and melt slowly while stirring, for 4-5 mins. Do not let it boil. You can create a frothy finish by whisking vigorously before pouring it.
