INGREDIENTS
Maris Piper potatoes
200ml balsamic vinegar
Garlic, whole bulb smashed
Red onions, roughly chopped
Thyme Butter
Olive Oil
METHOD
1. Peel and parboil the potatoes
2. Drizzle olive oil on to base of roasting tin and add knobs of butter
3. Add garlic cloves and thyme
4. Toss in potatoes and onions
5. Pour in balsamic vinegar, and mix
6. Roast at 180C for 90 minutes
