NIGEL SLATER’S second stop is Turkey, whose food is defined by the huge variety of produce emanating from its diverse landscape. He begins in i the capital city of Istanbul, formerly Constantinople, C which, in its heyday, was the epicentre of some of the world’s most exciting cuisine. After indulging in exuberant and luxurious Ottoman dishes fit for a pampered sultan, Nigel’s (pictured with farmer and hotelier Faruk Kete) ‘appetite for new flavours’ takes him through ancient rural Turkey in search of inspiration from authentic home-cooked dishes, passed down the
generations.
