NIGEL SLATER’S second stop is Turkey, whose food is defined by the huge variety of produce emanating from its diverse landscape. He begins in i the capital city of Istanbul, formerly Constantinople, C which, in its heyday, was the epicentre of some of the world’s most exciting cuisine.
